I've bought one of those (thank for the recommendation).
Opened it up and it's basically a pressure switch that shorts a resistor
across to terminals.
You fill it up with water and, presumably, as the soil dries, it tries to
'suck' the water through a porous ceramic tip under osmosis, reducing the
pressure.
It should be simple enough to wire to virtually anything.

Have you considered a hack of one of the moisture sensors from Gardena
automatic watering systems?
