What i have done and it works for me.

I had 3 server running sbs2003, win 2k3, Linux(Zone minder and asterisk)

I have now installed ubuntu server on my quad core server with 8gb ram.
Using this as the zone minder server and then have it acting as the VM
host.

I now have 7 VMs running and the server is using the same amount power as
it was before just running sbs2003.

I have been taking weekly meter readings for the past 5 years, and since
going virtual we have had the lowest readings.

The server has been more stable with unbuntu, i have also configure raid
and it was simple to move VM around.

USB passes thorough ok for most devices. I believe that the serial ports
will work as it's would be host OS that talks to the pci cards so as long
as there are drivers VM on linux points the serial to the linux devices.
