There is no requirement for audio content to be in any sort of apple or
ipod format, just one of the supported standard formats.

iTunes will happily search your HD for audio files and incorporate them
into your iTunes library when you first run it. You don't /have/ to
convert them as long as they are in one of the supported formats,
although there is an option to convert them into whichever default
format you have selected in the Preferences.
