The approach I have taken is as follows:

Mini-ITX running 24 x 7 runs my HA software, Exchange, WSUS

Intel Core2 Quad Machine runs Vista 64bit and VMWare Server 2.01

The latter machine only comes on when I need it and is controlled via WoL
and a Squeezebox Plugin that allows me to suspend from the the SB3 remote.

Anyway it is running Vista 64 bit as base OS for a video capture card as
part of a PVR system. VMWare Server (free license) then runs on top which a
VM for XP, Windows 2008, Windows 2008 + Exchange 2010. Currently it has 4GB
DDR3 but the MoBo can take 8GB so I'll probably upgarde allowing more VMs.
That is the other benefit of Vista 64 bit you can go beyond the 3.5GB limit
of a 32 bit OS
