The latest version of the Apple universal dock can do component out from
an iPod touch (*). You can use an Apple remote with it.
(*) Even on a 720p screen it doesn't look that hot to be honest. By
default photos are stored at the resolution of the iPod touch screen,
and don't scale particularly well. I think there might be an option to
store them in original format, but that could take up quite a bit of
space per photo...
