XenServer will allow you to convert a Linux machine into a virtual
machine:

However I think you have to reboot it, I'm not sure you can do it
while the machine is live - I have never tied p2v on Linux.

You can download and use XenServer Express for free as well.

I should add that I work for Citrix who aquired XenSource so may have
a slightly biased view - although i do use the VMWare convertor
myself when doing p2v or v2v of windows :-)
