There are many VGA to Cat5 extenders out there but most are limited
resolution, if you run a relatively high res, you'll need to look at that
carefully. The other thing to double check is the keyboard/mouse reception
in real world use. I have a couple of keyboards designed for presentation
use that supposedly have extra powerful transmitters but these still have a
problem if objects are in the way or if there's other interference from
other wireless devices. Easy to test though before you spend any money on
the other kit.

You may start to run out of Cat5 cables depending on how many features you
want to extend i.e. VGA, USB, Video, Audio etc. Some of the DVI extenders
I've seen use two Cat5 cables for the signal.

Extending the video and audio signals from the Sky box is really easy.
Again there are composite/S-Video/Component to Cat5 extenders out there
that work really well. These normally can also be used for audio (analogue
or digital - digital via coax output or SPDIF via an optical to coax
converter and then via the extender).

I have a load of Keith Doxey's Kat5 units here that do all of that.
