The reason for shielding in the Idratek network is because of
potential interference on the audio transmission. If you run Cat5 in
parallel and close proximity to mains cable you could suffer
interference because of EMF (Electro-magnetic fields). However,
finding Cat5e STP stranded is not easy.
IdraNet network can happily run over standard burglar alarm cable or
bell wire for most situations so don't get hung up too much on the
perfect cable.
