I actually *do* recompress my ripped DVDs, despite watching them on a
46" LCD - but what I do now is encode at a much higher rate.

before going for the big panel, I used to encode to about 1.4Gb per
typical movie, now they end up at about 2.5 - 3Gb.

I rip using DVD Decrypter, except for the ones with annoying regional
protection, where I use DVDFab HD Decrypter (works for regular
content too).

I rip to a folder, then use AutoGK to encode them to XVid, retaining
the full 5.1/DTS sound. I use a quality setting of 85% on "drama"
stuff, 95% on Action. the 5% makes a chunk of difference in size, but
no visual difference (to me), even on the big screen..

of course, each time I step up the quality, I need to re-rip which
involves digging the damn DVDs out of the loft again and sitting
ripping for ages.. probably the next time I bump the space up on the
server, I'll consider just going to a straight rip and be done with...

I.
