I've gone down similar lines to this, adding a different set of pedals
with a clutch pedal (proper ones not the G25:-), modifying the brake to
push down on a load cell to provide pressure sensitive braking rather
than relying on pot travel which is how most pedals work (but in an
unrealistic way). A stripped down Logitech forcefeedback wheel has been
built in and modded with a pukka quick release steering wheel. Finally
I've added a h pattern shifter and a dedicated monitor behind a fresnal
lens to give a sense of depth to the image.
I've got the usb connections near the dash, the mods to the seat are
unnecessary and the pedals slide to fit different heights.
A proper dash is next in line!

Well, actually, if I had one of these, I would definitely modify these,
- Use a Logitech G25 wheel
- Add a holder for the G25 gearshift
- Cut & shut to accommodate the G25's pedals (its got a clutch pedal
as well)
- Use a proper bucket seat
- Add seat slider
- Add a subwoofer at the back
- Add some USB connections to near the "dashboard"
And finally if space allows, building a complete PC into it would be
quite nice too.
