Paul,
I think you may have missed an option in iTunes when setting it up. With
your iPod connected click on the iPod in the Devices section of the screen
and ensure the "Summary" tab is selected. In the middle of that
screen are 4
options one of which is "only sync checked items".
Yes I agree this is a really stupid place for the option - it took me AGES
to find it.

uncheck selection" - (the little tick in the box next to the track
name)



I rather thought that I could go through the library, checking songs
that I want to sync, and then sync that selection to the ipod... -
except it doesn't seem to want to do that.. - there is no option to sync
all the "checked" entries to the 'pod....
