2560x1600 (@60Hz or whatever) is beyond the maximum data rate of the
single (*) serial link in a normal DVI connection. These big panels
have to have the bitstream split over 2 serial links in order to
provide enough bandwidth. I think it's actually called "Dual Data
Link" (DDL).
(*) It's actually 3 serial links - one for each of red, green and
blue, and 6 for DDL.
Some graphics cards have one DDL DVI port, and one SDL (ie single
data link) DVI port, so can drive one display up to 2560x1600 @60Hz,
and one display up to 1920x1200 @60Hz.
