I was thinking whether I could simply stick a low spec (and hopefully
quiet)
PC in their room instead. But I have a feeling you need to install MCE on
the PC and not XP.

Not sure if your concern is a multicast sharing or a connectivity
issue.
For connecitivity, I imagine your loftbox can distribute TV to the
kids bedrooms via Co-ax. But oviously, they'll be stuck with the same
channel being watched around the house.
There is a hack available somewhere on thegreenbutton.com which allows
you to specify the primary vs. secondary tuner preference within MCE.
If you're able to configure this, then whenever you're not recording
from the primary Sky box, the other box may be fine for viewing around
the home.
Again you are restricted to the number of tuners you have. A single
tuner multicast will result in all rooms viewing the same content.
Have you thought about freeview in the kids bedrooms ?
