Find your local asian food store (if you are in Glasgow, I can=92t

Matthew=92s supermarket in Port Dundas highly enough) and mix up your garam
masala fresh.

Grind this lot:

1 tbsp coriander seeds
1 tbsp cumin
1 tsp green cardamom pods
1 tsp cloves
1 tsp black peppercorns
2 sticks cinnamon
2 bay leaves
4 black cardamom pods

Together in a coffee grinder, or mill =96 the smell will blow you away.

Basically, if you are adding garam masala any older than a couple of weeks
into your food, you might as well use sawdust =96 try the fresh ground
stuf=

I have found myself using WAY more spices than the recipes say to get any
sort of
flavour out the dish.
like If i add 1 tsp of coriander and 1 tsp of garam masala like it advises
the end result
just tastes like water... absolute no flavour at all.
possible the jars of spices I have have lost their flavour over time? I am
unsure.

Yes - I was quite successful with it - the 'second' stage cooking is quite
important though - I have messed up a few times here.
Have you found any other books that are really good?
Oh, and just to keep REALLY OT - anyone got any good knitting patterns?! ;)
