The easiest first solution, in most cases, is to put a default gateway
in on the adapter that you want to be "Default" and not on the
other
one. Then the other one will only be used for local (to that network)
traffic...
Of course, that is assuming that they are actually two different
networks, and not two connections to the same network...

You don't exactly explain what you mean by 2 networks. I assume you mean
"wired" and "wireless". They don't necessarily are 2
different networks
in IP networking sense. It would be good if you can give us more info on
your network setup. (output from "ipconfig -all"
and "route print" would help.

As far as I know in most applications you can't. Some mostly server
applications can bind to the specific adapter.
There is also an option of configuring your IP routing to use specific
adapter for specific destination IP or network or at least give it
priority by changing the interface metric.
