PIRs (several) - I use X10 PIR's at the moment.

inside temperature (more than one, maybe) - RFXCOM and 1-wire sensors

outside temperature (just one ?) - 1-wire just one

light-level (more than one ...) - Proto-type, xAP Sensor I have built
around a AVR Microprocessor, which then sets the level for each area, this
is different for each area, such as the hall which is nearly always dark.

carbon-monoxide (more than one ...) Only standard smoke alarms at the
moment.

wind (one) - http://www.piertopier.net/weather.xml
I am a windsurfer so this suits me, as it is on the beach.  I parse this
and it is displayed on my NetRemote Setup.
