Could generate a basic video signal with a PIC, or hack up one of those
plugs-into-the-telly computer games (about a fiver from Argos) or
something.
Alternatively, a friend of mine (who's more than a bit of an Apple
fanboy) has one of these:

which sounds ideal, and it looks like it's possible to send arbitrary
audio from a Windows machine using this utility, so you're not locked
into itunes:
