David,
You *could* achieve 8 x cat5 sockets on a double gang faceplate with
some of these I think:

1 x 11658, 2x 11662, 8 x 10152 (check this out though, as I've only
had a quick look!)
My concern though would be managing 8 cat5 cables in a double gang
backbox whilst considering bend radii - 4 is hard enough in my
experience!
