In reality, a secondary e-mail server is not really necessary and more
like a liability if it is outside your direct control.

If the primary server becomes unavailable, say for a day, all correctly
configured sending e-mail servers with reasonable retry periods should
queue the e-mails and wait for the recipient server to become available
before resuming delivery of the e-mails so none should be lost.
