Don't give up just yet.
Something I worked out early on was that Windows MCE just can't cope with
running longer than a couple of days. Therefore I run a scheduled job each
night at 5am which reboots the PC and loads MCE afresh.
In my MCE install that I've just decommissioned (ran for 6 months) it's
failed no more than once a month - I've just set up a new MCE PC, so we'll
see if the new one is any more stable!!
Just don't expect it to last if you don't reset the machine regularly.

OK I formally give up :-(
Been away for a couple of days so left the MCE box on with some
proggies to record.
Just got in and switched on the TV
Error Message - Some files missing to play video. Restart Media
Center or PC
Restarted Media center - Black screen when restarted
Restarted PC - Booted OK but Black screen when MCE loads
The really weird thing is that once its loaded and the screen is
black, if you press the "Windows" key on the keyboard the windows
menu appears in the foreground and is navigable and you can see the
MCE menus in the background. But if you click on the MCE screen it
goes black and the mouse starts to shimmer.
Looks like some video overlay type problem to me!
At least this time I backed it up!
Might just try running it for a couple of days using a monitor rather
than via S-Video to the TV.
