Hi,
Given you can use a webserver to control it I think it would be rather easy
and you have a number of options - mainlobby springs to mind (well
weblobby).
Russound also have just brought out a colour touchscreen option for their
CAVs although not cheap it looks the business and fits in the same backbox
as the standard controllers.

Yes I would be very keen on any experiences and especially if the PC
Client would work in a Touch Screen Environment
