Have a look at Cacti http://www.cacti.net/
I used to use it to graph various temperatures and other system
information until a powercut wiped out the hdd it was on, and I've not
set it up again since, otherwise you could have had a browse around my
setup :-(
There's also Crickit which does the same thing, but is a lot harder to
set up. Also available is good old MRTG too, but I've never used this.
