I think the issue was that there seems to be no software RAID 5
Mac OSX 'only' supports software RAID level 0 and 1 out of the box

Apologies for the delayed response but this has been festering away at
the back of my mind. After a bit of digging....
The mac mini running OS X (current release) does support Firewire RAID
both Mirrored and Striping out of the box. This is accessed via it's
Disk Utility application.
I'd presume this is why the software product Tim referred to no longer
exists!
I've even seen web pages where people have even created striped arrays
of iPod shuffles and memory sticks!
Probably doesn't help but just to set the record straight.
