Loft insulation

I'm looking at boarding part of my loft to create some storage and
somewhere for my Node Zero.

With the recommended insulation thickness much more than the size of
most peoples ceiling joists, I wondered what people did in the parts
of the loft that they boarded ? I have considered buiding up to joists
to increase the available height for insulation, but don't want to
loose that amount of height in the loft.

Any suggestions people have would be most welcome.
