I've built a number of 1U boxes with standard CPU and memory, though
they do require a low-profile heatsink that I've never been able to get
to work properly with the hyperthreading Intel CPUs. Whether there's
space or not probably depends on your choice of chassis and motherboard
as much as anything.
However, try www.acme-technology.co.uk. I've used them for most of the
1U and 2U rackmount stuff I've built recently.
