RE: Video editing software...
I've got same situation with some of mine - not on your scale though..
I just used dvdshrink to re author them.

...thought I'd try up here as well as Googling on a few forums.
I have all my DVDs ripped to my server and they're playing back great using
an HTPC - they've all had menus, extras and unwanted audio tracks /
subtitles removed already but I still have some older DVDs (mainly Columbia
Tristar titles such as "Bad Boys" and "In The Line Of
Fire") which have
about a ten minute set of trailers at the start of the main movie feature
which I'd like to remove.
Anyone got any suggestions for any software that will allow such editing?
