Recording phone calls.

Two questions:
1: Can I set up Asterix to record incoming and outgoing calls (ie -
calls on which I'm actually speaking, not just voicemail)
2: If not, can any recommend me a nice piece of software that will do
so WITHOUT a beeping to let the other party know (which stopped being
a legal requirement a few years ago.)
Basically, I have an invoice unpaid since June. I did some subcontract
work, and I know that the lead contractor was paid early July, but
every time I phone to chase my own invoice, I get a series of weaker
and weaker excuses. (Including, for example, "your cheque's on top of
the telly, I don't know why I forgot to post it")
I fear that I am going to have to get the courts involved on this one,
hence I want a nice recording of one of these phone conversations that
I can wheel out as evidence to show that he has promised to pay,
realises that the invoice is way overdue, and continues to say that
the reason for non-payment is administrative error on his part. This
is as a defence against a future "well, we were withholding payment
because we weren't happy" defence.
I'm pleased to note that the client ISN'T part of this list. While I
have clients from UKHA_D, I'm glad to say that you've all proved fast
payers - keep up the good work :-)
Mark
