We have Asterisk running for over a year on our lowly Linux server (dual
233MHz with 128MB RAM) without any problems at all. The same server is
also the firewall, e-mail server, web server, shared data drive, MP3
share, etc.

We have a couple of Snom VoIP phones (Snom 100 and 200) that are
permanently online. Beware when you are using the Digium PSTN card though.
We used to have it plugged into a PSTN socket for VoIP to PSTN gateway.
However, one day a BT engineer suddenly turned up to say that they have
detected a short on the line. It turned out to be caused by the FXO card.
The BT automatic equipment must have somehow detected the FXO card's
presence as a short in the circuit. The FXS card still works fine when I
plug it into a PSTN socket but I don't leave it permanently connected now.
