Even better - Have it output those logs to either a local MSDE install, or
across the wire to a SQL server... Index the tables right, and searches
become a breeze.

Implement Microsoft ISA on your server, and set everyone's browser
proxy settings to it.  Configure your firewall to only allow outward
access from the ISA proxy, so folks cant bypass the proxy.  Job done.

As the server running ISA is part of your domain, you can trust the
usernames it places in the log files.  In the log properties, set
some more switches on - the selection configured as standard are a
bit minimalist.

Use any weblog analyser (or write some perl and/or awk) to analyse
the resulting logs.

This works in real life - A recentish site of mine had 5K users
through one ISA server, and the logging stood up to a kiddy porn
surfer being fired, going through every industrial relations
protocol known to man; Firing a civil servant is next to impossible!

Mail - dont know an instant solution besides exchange logs, but I'm
a bit out of date.  Enter the term "lawful interception" to
wherever
you find out about exchange...
