DVD Decrypter (just do a Google search) ... I'm sure you can edit out
audio streams using VOB editors but to be honest the audio is pretty
insignificant compared to the video in terms of data size.

If you're short on space and not too woried about keeping everything as
good quality as possible then you should look at Divx encoding them. (I
don't do this so can't help you there.)
