I don't know of any easy way to do this. There is a method outlined in this
post which may work never tried it myself though....

Alternatively there are some tools available at the links below....they
aren't cheap ($800 and $1500) you can try before you buy and I guess it
depends how important the data is to you.

For both these I think you would need to plug the disk with the exchange
files into another machine.
I haven't tried any of these so can't be sure they will work

Hi,
I'm trying to get four Exchange mailboxes off an expired version of Win2K3
server evaluation. It runs for about an hour, then bluescreens.
Can't login, so can't do anything on that machine. Tried using the
migration wizard on the new server (MS SBS 2k3) but it can't see the old
server for some reason. They're plugged together with a x-over cable, and
can ping each other.
Tried using Outlook as an IMAP client to get the mail off it, but it won't
let me login - username format was DOMAIN/USERNAME/MAILBOX but no luck (and
I can't login to check the mailbox/user names!)
Any suggestions? Got a deadline of Sunday lunchtime to get this lot
sorted..
