If your ripping to MP3 . . . .  Apple iTunes is my weapon of choice.
(Although maybe in biased as im slowly using my powerbook more than my
windoze
pc :) )

It will allow you to choose bit rate too. . .   i use 192kbps

Of course, its Mac and PC compatable.
