When I did my place (retrofit) I used trunking in *some* places. I've got
the trunking buried in the wall so cables can be removed / reinstalled in
future, but all of the wiring under the floor is "free", or just
clipped to the joists.
Why ? well I saw it being very difficult to replace the in-wall cable
without trunking, but the under the floor stuff, since I've already lifted
the floors to install the cable in the first place, so I can lift the
floors again to replace / upgrade what's already there. It's still not a
trivial task though.
Just a further point about ducting, and I hope this won't be granny &
eggs etc. but I'd be amazed if you could stand at your wall outlet and pull
your cable all the way through from your wiring closet. In practice there's
just too many bends to allow you to pull the cable in one go, without
additional access points along the way. Additionally, the size of ducting
you would require for your main runs through the house may be physically
impossible in a retrofit.

And Tracey, somehow I think I know what you mean re: *flood* wiring ;-)
