I've seen this done with a wetted concave soldering iron tip. You solder a
couple of pins to stop the chip moving, flux the other pins and then drag
the solder tip across the other pins - hey presto 1 side of a chip
soldered!

With a steady hand and practise. Of course the correct expensive _very_
thin
solder and a temperature controlled soldering station with a tiddly tip go
a
long way to helping. The soldering kit was about 100 quid by the way and
was
one of the best things I have bought for a long time. To see some of the
results look at
http://www.mollyology.com/ProjectsGraphicDisplayInterface.htm
where you can
see some of the smallest/fiddlyest soldering I ever hope to have to do.

I don't think I've built anything that would fit in a box smaller than a 2U
19" rackmount case :-)

But never mind de-soldering - how do you even go about soldering one of
those tiny surface mount chips in the first place?

Mal
