You quite often see 6 channel power amps for 5.1 use - rotel do/did one.

As the slimp3 has a volume control, that ought to work ok. You could
then connect a pair of speakers to each channel so long as it doesn't
fall fowl of the minimum impedance spec of the amp (if it can do 4ohms,
you can have two 8 ohm speakers in parallel).
