Aaaaaaahhhh, it's called vob2audio

Think I needed to use something like smartripper to pull the vobs off
the dvd, then vob2audio to extract the wav/mp3 etc.

Now that you know the name, finding a step by step guide on doom9 or
something is easy :) Infact http://www.doom9.org/v2a_mp3.htm
and one of
the links says you need to use SmartRipper otherwise you don't get all
the language selections.
