I never experimented with tablet pc's yet so cannot really your os
question, however, I found this one on the web

http://www.smartdisplay.nl/

apparently a tablet used as a 2nd (wireless) monitor to an existing
pc, so I assume you can run about any OS and then have these as an
addon monitor (with touchscreen) piloting your network server for ex.
