Yes you could use 2 relays to do the same as a double pole.......Personally
i would use double pole depends on what your using them for ?? You ok for
wiring or do you need a schematic ??

I have a load of single pole relays available (i assume single as they have
3
terminals, a,b&c. With out power a&b are connected. With power
b&c are
connected). I was wondering if my thinking was correct. I assume using 2 of
these would be the same as a double pole relay
