Your FXO is a Telephone Line to VoIP gateway, allowing VoIP phones on your

make call to a "standard" telephone number.
Your FXS VoIP to Standard Telephone gateway, allowing you to plug your
cheap
old standard phone into your VoIP network and make VoIP calls, and/or plug
a
standard fax into a VoIP network.

So, does anyone have a good intro document for VOIP
I'm finding the whole FXO/FXS thing a little confusing, and I'm sure this
