I used to use a nice thick 10m S-Video cable for my projector.

It worked fine.   Can't remember the make, but it wasn't that expensive.

I've just put Cat5e throughout the new house, so I'll be hoping to use a
mixture of AVNex and KAT5 to distribute S-Video throughout - though I'm
waiting to see what quality I get before deciding on how to hook up my
projector.

Of course it would be nice to pipe RGB around, but....................
