Usually people convert so that they can do something like s-video
switching in an AV amp

Yes.

A good CVBS-SVIDEO conversion cannot be done in such a small connector.
The quality of the video signal will be the same as for the CVBS, so why to convert it?

    Yes,

    Just put a capacitor ( around 100pF) between Chroma and = Luminance
    outputs then use luminance output as composite output.
    It works for me.
