I've not done this personally, though I feed my Xbox->optical->coax converter -
> 8m screened cable (retired from svideo feed by KAT5 units) ->coax->Optical
converter-> amp,
and Phil H. can probalby point you towards the URL of a guy who ran 5.1 over a
wire coat hanger with 100% error free transmission, so it's highly likely it
will be fine.
There was some talk a while back of being able to (in theory) run 5.1 over one
of the video channels on a KAT5 unit, without interfering with the video
signal, but I don't know if anyone actually got around to trying it......
