Dumb question?  Err.... oh, you've asked it anyway ;o)

The power supplies mentioned are regulated - they output 24V regardless of
how much/little power you draw.  Therefore you are quite safe connecting as
few lights as you wish, simply adding more lights as you find places to hide
them :o)

And no, the question wasn't really that dumb...

Can I ask a dumb question? Oh good!
If I get some of these PSU's would I do the units any harm by not having
all ten switched on or do they just draw as much as they need? Just
thinking about a gradual install scenario.
