cable types etc

Hi,

As I am getting the cabling started, got all my cat5 and coax. I want
to  put a plate in the wall above my bed head to which I can run
svhs,composite rgb and a scart connection for future plasma buy.

What cable types do I need for each of these. Seen various posts about
using cat5 (not going KAT5 route) but want something more hifi quality

I also would like to run have some firewire ports mounted in a couple
of the rooms, I should be ok on the lengths just not found any sockets.
