I would recommend using a length of twin 0.75mm flex as the LCD has a
current demand greater than the rating of CAT5.

I was thinking here (no clockwork jokes please) - why cant you send the
DC
power for the screen over CAT5 as well as the AV (albeit on it's own
cat5
cable) ?
Some Wireless APs do this so you dont have to locate near a power
source...
