Changing ITV Region on SKY

Can anyone help me, my brother has Sky (Pace Silver/black job) and would
like to try and change ITV  Central from position 103 and instead have
ITV Yorkshire displayed on 103 which is more relevant to where he
lives.

He can't find anything in the instructions on this he tells me, and Sky
tech support told him to ring ITV and talk to them!!!

I know on cable you can swap channels around to create what they class a
favourites listings but how do you do it on SKY
