IIRC 600mm is the standard depth, but you can get 800mm too.
Looking at the kit you've listed you could probably get away with a
600mm rack. However, 800 x 800 will give you space within the rack to
run your cables. If you have the space I'd go for 800x800 .. (but
thats personal preference)

Trust me you WILL want to be able to get behined the rack, unless it
has wheels in which case you could slide it out.. the downside
is: "Haw you ever tried to 'slide' a fully loaded full rack" -
it's
not easy! The other option is one that I think Mark adopted, cut out
a hole in the back wall and fit a door, that would give you rear
access.. take a look at:
