With a surround sound setup (let's say 5.1) there will be five channels of
amplification (left, right, centre, rear-left, rear-right). With an
integrated AV amp then you are right that the volume control will affect
all channels at once, but usualy there is a setup function in the amp that
allows you to set the relative volumes of each channel. For example with my
Arcam amp I can go into a series of screens where I set the distances from
my prefered listening position to each speaker and also the type of speaker
(small or large) and finally I can apply a 'modifying factor' to rears and
centre as well. The combination of all of this allows relative volumes to
be set. Technically with an integrated AV amp such as this, the processor
is in the amp, it is also possible to have the processor built in to the
DVD player and it is possible to have DVD, processor and amp(s) all being
separate boxes. The important this is that the processor, wherever it is
located, is likely to have this 'relative adjustment' facility and it is
there that you would for example make the rears louder.
