Wiring up an RJ45 with the colours 'the same at each end' can only lead
to problems some time in the future. The performance of the signal
relies on the twist of the cable. Why try and cut corners now.....
you'll only regret it later.
Pin 1 - White/Orange
Pin2 - Orange/White
Pin3 - White/Green

Pin7 - White/Brown
Pin8 - Brown/White
Wiring up is pretty straight forward into the RJ45.

For short leads it probably doesn't matter which wire goes where so long
as both ends are the same.
For longer leads I would look at an existing cable or the markings on
the back of your face plates or patch panel so you keep the signals on
the correct twisted pairs.
Don't forget you need stranded cable for patch leads.

I need to do some CAT5 cabling and logically I should buy a big 300M
reel and a crimp tool/RJ45 plugs and do it myself.
How easy/difficult/tricky is it to wire these plugs onto bare CAT5?
Also, how do I know which wire connects to which pin on the plug?
I presume I use the crimp tool to connect them up?
Or should I continue to be a big girly wuss and buy pre-crimped??
