Thinking about it, you could have 8 zones, any or all of which could run at the same time, using _4_ wires, not 8... however, it would add latency.
 
The first three wires would specify a zone using the coding you suggest below. A pulse on the 4th wire would toggle that zone in or out of the active set...

I'm still interested in this too... are you using some kind of binary
encoding using the 3 connections to represent the zones or have I got
it all wrong? I was thinking along the lines of:

x=low o =high

Example 1       

Pins
123
x00 = zone 1

Example 2     

Pins
123
xox = zone 4
